Are these process mandatory?
Yes, they are mandatory in Europ since 1 January 2005.

Who can control?
DGCCRF (in France), customs, customers (during audits).

What concerns by the control?
The good behaviour of registers (CVI, registers of treatments, registers of oenological products, stocks of products, etc.) and archives (analyze, suppliers' invoices, etc.). The winemaker must be able to prove during the visit of the controller, the origin of produced wines.

What is the difference between the traceability and the HACCP?
Both are mandatory

- Traceability can prove the origin of wines on the market. It also helps to isolate a faulty batch of wine, to trace the origin of the defect, and remove him from the circuit.

- HACCP allows the winemaker to guarantee to the consumers (and to the controllers) that all the measures were taken to insure a good food hygiene on the whole chain of elaboration of wines . The objective is to prevent and control any danger to the consumer.

My days are busy in the vineyard or the cellar, and I'm not often in the office. How can it be done?
It is true that to enter data on computer or classify documents is not really the true job of the winemaker . But with a little organization and adapted tools, it is practicable !

how much does it cost?
The cost is variable according to the size of the estate, his internal organization and the objective aimed by the producer. @ntajan offers solutions for a reasonable cost. The price of implementation of the traceability software is fixed. So, no unpleasant surprises or hidden costs (the maintenance and the training are unlimited during 1 year!)

Except the statutory aspect, what are the other advantages to set up traceability and HACCP?
From a commercial point of view, an estate that have established a traveability and/or a HACCP process will win more easily the confidence of his customers and will perpetuate his markets. In a competitive environment, these process are "extra" that can boost sales. Traceability is also a management tool useful for winemaking technical decisions.

Which investments provide?
- HACCP can reveal critical issues of food security that may need some "up to standard" and therefore sometimes some variable investment cost.

- The traceability leads(infers) the treatment of a large number of information which must be easily restorable. For it the IT tool (and thus the purchase of a computer) is strongly recommended.

Does the software Carnets d'Origine require skills in computing to be used?
Little. This tool is very simple to use.

Does the software Carnets d'Origine require a particular computer hardware?
No. A simple computer is enough. This software works with Microsoft Access. It is thus necessary to plan to acquire this element of the Office suite if you do not have it.
